Sweet & Spicy Chicken Kebab Recipe for Flavorful Grills

It’s never too early in the season to enjoy food on a stick, so let’s start today with these Sweet and Spicy Chicken Kebabs. Tender chicken is marinated in a vibrant sauce made with ketchup, brown sugar, sriracha and other pantry staples to create a sweet, tangy and slightly spicy glaze. They’re excellent alongside Paprika Spiced Potato Wedges or a bright salad such as Zucchini Pasta Salad in a Lemon Vinaigrette.

Yes, barbecuing in winter is a thing — no judgement. I live in southern Spain where the weather keeps grilling season going most of the year, but these kebabs work whether you’re clearing a little snow off the grill or firing up an outdoor cooker on a warm afternoon.

I like to start kebab season early for anyone who enjoys juicy, flavorful meat on skewers. These kebabs are quick to prepare, packed with flavor and versatile enough for weeknight dinners or weekend cookouts.

All About These Sweet and Spicy Chicken Kebabs

  • These kebabs balance sweet, spicy and tangy flavors. Kids loved them and adults did too — they have enough heat to be noticeable, while the brown sugar and ketchup bring a mellow sweetness that keeps the overall taste approachable.
  • You can omit the dried chili or reduce the sriracha if you prefer a milder version.

For best results, marinate the chicken for at least an hour; overnight marinating will deepen the flavor. Serve the kebabs with a large green salad, couscous and a minted yogurt dip for a complete, satisfying meal.

Instructions

  • In a small saucepan over medium-low heat, combine ketchup, soy sauce, sriracha, Worcestershire sauce, vinegar, brown sugar, garlic, dried chili, salt and pepper. Stir and simmer gently for about 10 minutes. Remove from heat and cool slightly.
  • Place the chicken pieces in a large bowl and pour the marinade over them. Toss to coat, cover and refrigerate for at least one hour, or overnight for more flavor. When ready to cook, thread the chicken onto skewers (about 4–6 pieces per skewer, depending on size) and arrange them on a baking tray.
  • Bake in a preheated 350°F (175°C) oven for about 20 minutes. Turn the kebabs, then return to the oven for another 10–15 minutes, or until the chicken is cooked through. Alternatively, grill over medium heat until cooked and slightly charred.
  • Remove from heat and serve immediately with your favorite sides.
