Ingredients
1 1/2 cups sugar
2 eggs, slightly beaten
1/2 cup oil
1 cup pumpkin puree
1 3/4 cups all-purpose flour
1 tsp baking soda
1/4 tsp baking powder
1 tsp salt
1/2 tsp cinnamon
1/2 tsp ground cloves
1/2 tsp nutmeg
1/4 tsp allspice
1/3 cup water
1/2 cup chopped walnuts or pecans
1/2 cup raisins (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Grease and lightly flour a standard loaf pan.
- In a large bowl, mix the sugar, eggs, oil, and pumpkin until combined.
- Add the flour, baking soda, baking powder, salt, and spices in the order listed, alternating with the water. Stir until just combined; do not overmix.
- Fold in the nuts and raisins if using.
- Pour the batter into the prepared loaf pan and smooth the top. Bake about 60 minutes, or until a toothpick or knife inserted in the center comes out clean. Baking time may vary slightly by oven.
- Cool slightly before slicing. Serve warm with honey butter for best results.
