Ingredients
Salad
- spinach
- apples diced
- parmesan cheese, freshly grated
- nuts sliced almonds or other nuts
- cooked bacon
Dressing
- 1/2 cup oil (mild oil such as avocado)
- 1/4 cup vinegar (apple cider, red wine or white vinegar)
- 1/4 cup honey or sugar
- 1/8 red onion thinly sliced
- 1 clove garlic minced (optional)
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp dry mustard powder
- 1 T warm water
Instructions

Combine the spinach, diced apples, strawberries (if using), grated Parmesan, sliced almonds and cooked bacon in a large bowl.

Add all dressing ingredients—oil, vinegar, honey (or sugar), sliced red onion, minced garlic (optional), salt, pepper, dry mustard and warm water—to a blender and blend on high until smooth.

Pour the dressing over the salad and toss gently to coat. Store any leftover dressing in a sealed container in the refrigerator for up to three weeks.
