Classic Hello Dolly Bars Recipe: Chewy Coconut Pecan Bars

Hello Dolly Bars are a delightful combination of graham cracker crumbs, melted butter, chocolate and butterscotch chips, shredded coconut, chopped pecans, and sweetened condensed milk.

Sweetened condensed milk is the reason these bars are so irresistible — it creates that rich, gooey texture that holds everything together. After making this batch, I nearly drank the leftover half can.

Magic Bars in a baking dish

Hello Dolly Bars trace their name back to the 1960s, inspired by the Broadway show. They’re also commonly called 7-Layer Bars or Magic Bars. Whatever you call them, these bars are dense, sweet, and incredibly indulgent.

They’re simple to assemble but benefit from some patience — chilling them overnight helps them set so you can cut clean squares. Fresh from the oven they look very liquidy, but they firm up as they cool.

This variation is adapted from More From Magnolia and differs slightly from some recipes: instead of forming a separate graham cracker crust, the graham cracker crumbs are mixed in with the other dry ingredients. I prefer how that distributes texture throughout the bars.

This retro dessert is a rich, layered mix of graham cracker crumbs, melted butter, chocolate and butterscotch chips, coconut, pecans, and sweetened condensed milk.

Equipment

  • 9-inch square baking pan

Ingredients

  • 2 cups graham cracker crumbs
  • 2 cups coarsely chopped pecans
  • 1 1/2 cups shredded coconut
  • 1 cup milk chocolate chips
  • 1/2 cup white chocolate chips
  • 1 cup butterscotch chips
  • 3/4 cup unsalted butter, melted
  • 1 1/2 (14-ounce) cans sweetened condensed milk

Instructions

  • Preheat the oven to 325°F (165°C) and lightly grease a 9-inch square baking pan.
  • In a large bowl, combine the graham cracker crumbs, chopped pecans, shredded coconut, milk chocolate chips, white chocolate chips, butterscotch chips, and melted butter. Mix until evenly coated.
  • Press the mixture firmly and evenly into the prepared pan.
  • Slowly pour the sweetened condensed milk over the top, spreading gently if needed so it covers the surface.
  • Bake for 30–35 minutes, or until the top is light golden brown.
  • Allow the bars to cool completely, then cover with plastic wrap and let sit at room temperature overnight before cutting into squares.
