Croque Madame Naan Pizza Recipe — Savory French-Style Pizza

Looking for a breakfast pizza or a pizza with egg? This Croque Madame Pizza is a delicious flatbread-style pizza layered with two cheeses, pancetta and a runny egg yolk — a combination that’s likely to become a new favorite.

To make this simple flatbread pizza you’ll need grated cheddar, grated gruyere, sour cream, Dijon mustard, Worcestershire sauce, flatbreads, pancetta and eggs.

Flatbread Pizzas

I’m a little obsessed with flatbread pizzas right now. While I still love classic pizza dough, flatbreads are so convenient and quick that they’ve become my go-to for easy, weeknight pizzas. They’re perfect for throwing together with whatever you have in the fridge.

There are several kinds of flatbreads you can use. I usually pick up naan, which often comes in packs of two, but packages labeled “flatbread” work just as well. Pita breads can also be pressed into service for a fast, personal pizza.

Breakfast Pizza — Or Lunch or Dinner!

Who doesn’t enjoy pizza for breakfast? If you remember college mornings when leftover pizza from the fridge was a beloved breakfast, you know what I mean. But instead of eating cold slices, imagine a warm, crispy flatbread loaded with cheese and topped with a sunny, runny egg yolk. That’s a real upgrade over leftovers.

Naan Pizza in Under 30 Minutes

This recipe originally appeared in a 2015 issue of Donna Hay magazine and quickly became one of my favorite flatbread pizzas. It’s impressive-looking, yet it’s on the table in under 30 minutes.

It’s genuinely easy and tastes amazing. I didn’t stop to photograph the perfect yolk pour because once that golden center began to spill across the pizza I dove right in — it was divine.

How long to cook an egg on pizza depends on how runny you like the yolk. I baked mine for about 18 minutes and it was perfectly runny. A few minutes more will set the yolk further; a few minutes less will keep it looser.

Ingredients

  • ¾ cup grated cheddar
  • ¾ cup grated gruyere
  • ¾ cup sour cream
  • 3 teaspoons Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • salt and fresh ground black pepper
  • 6 small flatbreads
  • 12 slices flat pancetta
  • 12 eggs

Instructions

  • Preheat the oven to 425°F (220°C).
  • In a medium bowl, combine the grated cheddar, grated gruyere, sour cream, Dijon mustard, Worcestershire sauce, and a pinch of salt and freshly ground black pepper. Mix until smooth and well combined.
  • Place the flatbreads on two baking sheets lined with parchment. Spread the cheese mixture evenly over each flatbread. Top each flatbread with two slices of pancetta, curling them slightly to form a small cup that will hold the egg. Crack an egg into each pancetta cup.
  • Bake for about 20 minutes, or until the eggs are cooked to your liking. I baked mine around 18 minutes for a nicely runny yolk. Remove from the oven, season with salt and pepper, slice and serve.

Notes

Use any type of flatbread — naan, pita or packages labeled flatbread all work well.

You can substitute prosciutto for pancetta. Bacon would need to be cooked first and may not form a secure cup to hold the egg.
