How To Make Jerk Chicken Marinade

I streamline this recipe by blending the marinade ingredients in a blender or food processor. If you don’t have one, you can finely chop and mix everything by hand, though that requires more prep. The blender creates a smooth, well-integrated marinade that coats the chicken evenly and infuses it with those signature Caribbean flavors.

In the blender combine:

  • 6 green onions, trimmed and roughly chopped
  • 1 onion, quartered
  • 1 fresh jalapeño, seeded and cut into chunks (leave seeds in for more heat)
  • 3/4 cup soy sauce
  • 1/2 cup distilled white vinegar
  • 1/4 cup vegetable oil
  • 2 tablespoons brown sugar
  • 2–3 sprigs fresh thyme
  • 1 teaspoon minced garlic
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
