This recipe was a real lifesaver. One Sunday morning my husband realized he needed to bring a cake to work to celebrate his birthday, and all the shops were closed. I scanned our kitchen and found plenty of carrots. Instead of the traditional carrot cake, I remembered a lighter recipe I’d made years earlier in Moscow: small carrot bites sandwiched with a honey-sweetened mascarpone cream. I couldn’t find all the original ingredients, so I improvised using cashew nuts instead of walnuts and reduced the sugar and butter to keep the treats light while still moist and flavorful. The result was a big hit — coworkers asked for the recipe and I made a second batch right away.
How these bites come together
The base is a simple, spiced carrot cookie studded with chopped cashews. The carrots add moisture and natural sweetness; the nuts provide texture and a delicate nutty flavor. The filling is an easy honey-mascarpone cream that balances the earthy spices and bright carrot flavor. These bites are built like mini sandwich cookies: a generous dollop of cream spread between two cookie halves. Refrigerating them briefly firms the cream and lets the flavors meld.
Preparation tips
Peel and finely grate the carrots so they blend into the dough and release moisture without making the cookies soggy. Roughly chop the cashews so you retain nutty bits for texture. When portioning the dough onto the baking tray, leave space between each mound — the cookies spread slightly while baking. Depending on your oven and tray size, you may need two batches.
Cashew Carrot Bites with Honey Cream
A light, moist dessert made with grated carrots and chopped cashews, sandwiched with a simple honey-mascarpone cream. Quick to make and wonderfully satisfying.
Ingredients
For the bites:
- 200 grams (about 7 oz) carrots — roughly 4 medium carrots, peeled and finely grated
- 150 grams (about 5.3 oz) cashew nuts, roughly chopped (walnuts work well too)
- 130 grams (about 1/2 cup) wheat flour
- 1 tablespoon corn starch
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 egg, room temperature
- 70 grams (about 1/3 cup) sugar — reduced for a lighter result
- 2–3 drops vanilla extract
- 70 grams (about 2.5 oz) butter, softened to room temperature
For the cream:
- 180 grams (about 6.3 oz) mascarpone cheese
- 2 tablespoons honey
Instructions
- Peel and grate the carrots finely. Roughly chop the cashews and set aside.
- In a bowl, whisk together flour, corn starch, ground cinnamon, baking powder and salt. Set this dry mix aside.
- In a large bowl, beat the egg with the sugar until well combined. Add the softened butter and vanilla extract, and beat until smooth and creamy.
- Switch to a paddle or dough attachment if using a mixer. Add the grated carrots and chopped cashews, mixing until evenly distributed. Gradually incorporate the flour mixture until a cohesive dough forms.
- Preheat the oven to 200 °C (about 390 °F). Line a baking tray with parchment paper. Drop heaped teaspoons of dough onto the tray, allowing space between each mound. You may need to bake in two batches if they don’t all fit at once.
- Bake for approximately 15 minutes, until the cookies are slightly golden. Remove from the oven and allow to cool to room temperature on a wire rack.
- Make the cream by stirring together the mascarpone and honey until smooth. Chill briefly in the refrigerator to firm slightly.
- Once the cookies have cooled, spread a generous layer of honey-mascarpone on the flat side of one cookie and top with another flat side to form a sandwich. Repeat with remaining cookies.
- Refrigerate the assembled bites for 30 minutes to 1 hour before serving so the cream sets and the flavors meld.
- Serve chilled or at cool room temperature and enjoy.
These bites are great for sharing, portable for gatherings, and simple to adapt. If you prefer a different nut flavor, swap the cashews for walnuts or pecans. You can also adjust the sweetness of the cream by adding a touch more or less honey to taste. The reduced sugar and butter in the cookie keep the texture light while preserving the moist, tender crumb that makes these so addictive.
