Green
Spinach is the star of many healthy recipes because it combines mild flavor with excellent nutrition. This smoothie highlights spinach alongside sweet pineapple and banana for a bright, vibrant drink rich in vitamin C, beta-carotene, lutein, fiber, and iron. It’s refreshing, mildly sweet, and a great way to add more greens to your day without tasting them.

This Spinachy Green Monster Smoothie works well during a detox or cleanse, helps alkalize the body, and provides a boost of antioxidants. It’s smooth, energizing, and surprisingly light—perfect for cooling off on a hot day.

If a vegetable smoothie sounds unappealing, you’ll be surprised: the spinach flavor is masked by pineapple and banana, so the drink tastes like tropical juice. Use an overripe banana for extra sweetness, or freeze it for a thicker texture. Meyer lemons are a lovely option if available, but regular lemon or lime works fine.

This version is vegan, gluten-free, and grain-free. I like it because it’s both nutritious and tasty—an easy way to enjoy more plants every day.

Recipe

Green Monster Smoothie
Ingredients
- 2 tablespoons ground flaxseed
- 2 cups fresh spinach leaves (big handful)
- 1 banana (preferably ripe)
- 6 ounces pineapple juice
- Juice of 1/4 lemon or 1/2 lime
- 1 big handful ice
Instructions
- Place ingredients in the blender in this order: flax, spinach, banana, pineapple juice, and lemon or lime juice. Adding heavier ingredients first helps prevent the lighter greens from flying up the sides of the blender.
- Blend for about 1 minute until well combined. Add the ice and blend again until smooth and chilled.
- Pour into glasses and enjoy. For a fun touch, garnish with a small paper umbrella or a slice of lemon.
Notes
Makes 2 servings.
