Crispy Apple and Bacon Salad with Maple Vinaigrette

Apple Bacon Salad

A simple, flavorful salad with spinach, apples, Parmesan, nuts and bacon. The homemade dressing blends sweet honey with vinegar and a touch of mustard for a balanced finish.

Ingredients

Salad

  • spinach
  • apples diced
  • parmesan cheese, freshly grated
  • nuts sliced almonds or other nuts
  • cooked bacon

Dressing

  • 1/2 cup oil (mild oil such as avocado)
  • 1/4 cup vinegar (apple cider, red wine or white vinegar)
  • 1/4 cup honey or sugar
  • 1/8 red onion thinly sliced
  • 1 clove garlic minced (optional)
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp dry mustard powder
  • 1 T warm water

Instructions

  • Combine the spinach, diced apples, strawberries (if using), grated Parmesan, sliced almonds and cooked bacon in a large bowl.
  • Add all dressing ingredients—oil, vinegar, honey (or sugar), sliced red onion, minced garlic (optional), salt, pepper, dry mustard and warm water—to a blender and blend on high until smooth.
  • Pour the dressing over the salad and toss gently to coat. Store any leftover dressing in a sealed container in the refrigerator for up to three weeks.
