This strawberry muesli mess started as an accident. I originally planned to make individual cheesecake jars but used a jar that was far too large, so the filling only reached about a third of the way up. It looked a little odd, but the flavours were incredible, and I didn’t want to waste it. I poured everything into a bowl, stirred it together and discovered a wonderfully messy, satisfying combination that was even better than the jars I had intended.

The finished dish is rustic and unpretentious, yet vibrant, creamy and bright with fresh strawberry flavour. It’s a great option for breakfast or a wholesome dessert when you want something quick, nourishing and naturally sweet.

What is a cheesecake muesli “mess”?

This recipe combines three simple components to create a layered, stirred dessert or breakfast bowl:

Crumbly base: A dense, slightly sweet mix made from raw oats and dates. It adds texture and a wholesome foundation — you can also substitute nuts if you prefer.

Cheesecake-style filling: A silky, dairy-free cream made from soaked raw cashews blended with a little agave, lemon and vanilla. It tastes unexpectedly rich and cheesecake-like despite being raw and vegan.

Strawberry topping: Fresh strawberries, half puréed and half chopped, giving both smooth fruit sauce and bright juicy pieces.

Once combined, these elements are gently folded together like an Eton Mess: intentionally imperfect, delightfully textured and full of flavour.

Reasons to love this muesli

Healthy and filling — perfect for breakfast or a lighter dessert

Dairy-free, vegan and raw

Gluten-free when made with gluten-free oats

Soy-free and suitable for many dietary preferences

High in protein and fibre compared to many sweet breakfasts

Quick to prepare — ready in under 10 minutes

Vegan Strawberry Cheesecake Mess

Yield: 2

Total Time: 8 minutes

Bright, creamy and naturally sweet, this quick cheesecake muesli mess combines oats, cashew “cheesecake” and fresh strawberries for a lush, nourishing dish you can enjoy any time of day.

Ingredients

For the cheesecake base mixture

45 g / ½ cup raw gluten-free oats

2 medjool dates, pitted

For the cheesecake filling

70 g / ½ cup raw cashews, soaked for at least 2 hours or overnight

2 tbsp unsweetened almond milk

Zest and juice of half a lemon

1 tbsp raw agave nectar

Topping

Approximately 8 large fresh strawberries

Instructions

Make the base: add the oats and pitted dates to a high-powered blender or food processor. Pulse while adding a tablespoon of water if needed, until you reach a dense, crumbly texture. Divide this mixture between two small bowls or glasses.

Rinse the blender and prepare the filling: blend the soaked cashews, almond milk, lemon zest and juice, and agave until smooth and creamy. Taste and adjust sweetness or lemon to preference. Divide the filling between the bowls over the oat base.

Prepare the strawberries: chop half of the berries into small pieces and purée the other half until smooth. Spoon both the purée and chopped pieces on top of the cheesecake layer.

Gently stir everything together to create a delicious, slightly messy texture — the aim is a mix of creamy, crumbly and fruity bits in every spoonful.

Serve immediately, or cover and refrigerate overnight. If chilled, the texture becomes softer and more like overnight oats, which is still delicious for breakfast.

This morning I woke to a to-do list that felt impossible. Should I make breakfast first? Change the baby’s diaper? Tidy the kitchen? The questions kept multiplying until I found myself sitting on a stool with my head in my hands. My husband looked over and asked, “Can I do anything?” I felt overwhelmed, but once I recognized it, I reached for my tried-and-true list of simple strategies. I call it “5 Things to Try When You Get Overwhelmed.” They don’t erase every problem, but they help me calm down, regain focus, and start moving forward.

5 Things to Try When You Get Overwhelmed

Wash the dishes. When the sink is full, the clutter seems to amplify how out of control everything feels. Taking five to ten minutes to wash or load the dishwasher accomplishes a concrete task and gives you one tangible win. The warm water and simple, repetitive motion can also be calming, making this a quick, accessible way to reduce anxiety and clear mental space.

Run a load of laundry. Starting a load of laundry is another low-effort action that produces an immediate payoff. The gentle hum of the washer provides white noise that can soothe a frayed mind, and knowing that a chore is in progress eases the pressure. This is a helpful small step when you need momentum but don’t have the energy for big tasks.

Make a list. Putting words on paper — or typing them into your phone — helps organize scattered thoughts. A list turns vague stress into actionable items, so you can prioritize what must be done now and what can wait. Break larger tasks into smaller steps and mark off items as you complete them; checking things off is motivating and reduces the feeling of being overwhelmed.

Sit for a minute. Give yourself permission to pause. Close your eyes, breathe slowly, and let your mind rest for a minute. Even short moments of stillness interrupt the panicked cycle of worry and allow your thinking to reset. You don’t need elaborate meditation; a single quiet minute can make a meaningful difference in your mood and ability to focus.

Ask for help. Asking for assistance is often the hardest step, but it’s essential. Whether you need someone to watch the baby for half an hour, help fold laundry, or handle a phone call, delegating reduces your load and creates breathing room. Practice requesting specific help—people are more likely to respond when they know exactly what you need.

These five approaches aren’t a miracle cure, but they provide a simple framework for coping when stress builds up. Doing small, practical things can create immediate relief and help you reassemble your priorities with less anxiety. The goal is to produce a few quiet, constructive moments that let you collect your thoughts and take the next step with more clarity.

If you often feel overwhelmed, try incorporating one or two of these tactics into your routine when stress starts to build. Over time, these small habits can become reliable tools for managing pressure and regaining control. I welcome other ideas and strategies too—sharing what works for you helps build a toolbox we can all use when life feels like too much.

Visitor FAQs

What is Hawaiʻi Regional Cuisine?

Hawaiʻi Regional Cuisine is a culinary movement that celebrates the islands’ diverse cultural influences and abundant local ingredients. Originating in the early 1990s, the movement brought together chefs who wanted to showcase Hawaiian-grown produce, Pacific-caught seafood and island-raised proteins using techniques inspired by Native Hawaiian, Polynesian and immigrant culinary traditions. The result is a distinct, modern cuisine that honors heritage while focusing on freshness and local sourcing.

Who founded Hawaiʻi Regional Cuisine?

A group of local chefs helped launch the Hawaiʻi Regional Cuisine movement in the early 1990s. These chefs promoted locally produced food, opened influential restaurants, and advocated for island farmers, ranchers and fishermen. Their work helped elevate Hawaiʻi’s culinary profile and encouraged a generation of cooks to use native and local ingredients creatively.

How does traditional Hawaiian food differ from Hawaiʻi Regional Cuisine?

Traditional Hawaiian food is rooted in the native diet and techniques—taro, fish, sweet potato and pork prepared simply through steaming, baking in imu (earth oven), or raw preparations like poke. Hawaiʻi Regional Cuisine builds on those foundations but incorporates influences from Japanese, Filipino, Portuguese, Chinese and other immigrant cuisines, applying contemporary techniques and a focus on local sourcing to create new, hybrid dishes.

I love lemon desserts—there’s something irresistible about the balance of sweet and tart. This lemon pound cake is a versatile treat: elegant enough for a shower or luncheon, but simple enough for brunch or an after-dinner dessert. Serve slices plain, with fresh berries, or drizzle extra glaze over fruit for a bright presentation.

This loaf is one of my go-to spring and summer desserts. It’s straightforward to prepare and yields reliably moist results with a lively lemon profile from both juice and zest. If you enjoy citrus-forward baked goods, this pound cake is a must-try.

For the Cake

1 1/2 cups all-purpose flour

1/2 teaspoon salt

1/4 teaspoon baking soda

1/2 cup unsalted butter, softened to room temperature

1 cup granulated sugar

2 large eggs, at room temperature

3 tablespoons fresh lemon juice

1 tablespoon lemon zest (about 3 lemons)

1/2 cup whole milk (or your preferred milk)

For the Glaze

1 cup powdered sugar, sifted

2 tablespoons fresh lemon juice (add more or less to reach desired consistency)

Full ingredient measurements and the printable recipe are included below in the instructions section for easy reference.

How to Make Lemon Pound Cake

Step 1 — Prepare: Preheat the oven to 350°F (175°C). Line a 9-inch loaf pan with parchment paper or spray it with nonstick spray for easy removal.

Step 2 — Acidulated Milk: In a small bowl, combine the milk and 1 tablespoon of the lemon juice; set aside. The mixture may curdle slightly—that’s fine and helps the cake’s texture.

Step 3 — Cream Butter and Sugar: In a large bowl, beat the softened butter and sugar until light and fluffy. A stand mixer with a paddle attachment or a hand mixer works well.

Step 4 — Add Eggs and Zest: Add the eggs one at a time, mixing after each addition. Stir in the lemon zest until evenly distributed.

Step 5 — Combine Dry Ingredients: Whisk the flour, salt, and baking soda together in a separate bowl.

Step 6 — Alternate Additions: Add the flour mixture and the milk mixture to the butter mixture alternately, beginning and ending with the flour. Mix just until combined—do not overmix.

Step 7 — Bake: Pour batter into the prepared pan and bake 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent with foil during the last 10–15 minutes.

Step 8 — Cool: Let the cake cool 10–15 minutes in the pan, then transfer to a wire rack to cool completely before glazing.

Step 9 — Make the Glaze: While the cake cools, whisk the powdered sugar and lemon juice until smooth. Adjust lemon juice or powdered sugar until you reach a pourable glaze.

Step 10 — Finish: Drizzle the glaze over the cooled loaf, allow it to set, then slice and serve.

Pro Tips

Line the pan with parchment for clean removal and a neat presentation.

Bring eggs, butter, and milk to room temperature for a smoother, more even batter.

Don’t overmix after adding flour; overworking the batter can make the cake dense.

Watch the loaf during baking; if the top begins to darken too quickly, cover loosely with foil.

For gifts or smaller portions, make mini loaves; they’re charming and portable.

Adjust glaze thickness by adding more lemon juice (to thin) or powdered sugar (to thicken).

Frequently Asked Questions

How should I store the cake?

Store the loaf in an airtight container at room temperature for 5–7 days. Refrigeration will extend its life but may slightly dry the cake—bring to room temperature before serving.

Can I freeze it?

Yes. Wrap the whole loaf tightly in cling film and place in a freezer bag, or slice and freeze individual pieces. Thaw on the counter before serving.

Can I use cake flour?

Yes. Cake flour will produce a slightly softer, more tender crumb. If substituting, use a trusted conversion or recipe adaptation.

While a Mudslide can certainly be served on the rocks, sometimes you want that thick, frozen texture — essentially a boozy milkshake — that you can make easily at home.

Frozen Mudslide Recipe

Picture a hot, humid evening when you want something cool, indulgent, and just a little bit naughty. A Frozen Mudslide is a straightforward answer: it’s rich, creamy, and easy to whip up in minutes. The classic version uses vanilla ice cream, but chocolate or coffee ice cream will also work beautifully and will deepen the flavor profile.

What is a Frozen Mudslide Drink Made of?

Ice cubes — use whole ice cubes rather than crushed ice so they stay solid until you blend.

Vodka — regular vodka works fine; flavored vodkas (vanilla, whipped cream, or caramel) will add extra sweetness and depth.

Coffee liqueur — Kahlua is traditional and provides the coffee backbone.

Irish cream — Baileys adds creamy, boozy sweetness.

Ice cream — vanilla is classic; chocolate or coffee ice cream are delicious alternatives.

Chocolate syrup — optional, for drizzling inside the glass to create an attractive and tasty lining.

Garnishes — chocolate shavings and whipped cream make a pretty final touch.

Helpful tools: a quality blender that can crush ice, a jigger or measuring tool for accuracy, an ice cream scoop, and tall glasses such as hurricane, Collins, or highball glasses. If you use straws, consider reusable or biodegradable options for sustainability.

How to Make a Frozen Mudslide

Place the ice cubes, vodka, coffee liqueur, Irish cream, and ice cream into a blender.

Blend until the mixture is smooth and creamy, pausing to scrape the sides if needed.

Drizzle chocolate syrup around the inside of the serving glass for a decorative, chocolate-lined effect.

Pour the blended Mudslide into the prepared glass. Finish with chocolate shavings and a dollop of whipped cream if you like.

How many calories are in a Frozen Mudslide?

This is an indulgent treat rather than a low-calorie cocktail. A standard Frozen Mudslide contains approximately 665 calories and about 67 grams of carbohydrates. Those numbers exclude optional garnishes like whipped cream and chocolate shavings.

If you want to reduce calories, consider cutting back or removing the ice cream, choosing a lighter ice cream or frozen yogurt, or reducing the portion size. Omitting a full scoop or two will significantly lower the calorie total.

Enjoy this rich, frosty cocktail responsibly — savor it as an occasional treat rather than an everyday drink.

Octopus Cupcakes – These adorable, googly-eyed cupcakes are ideal for an under-the-sea celebration. Cute, simple to make, and sure to be a hit with kids and adults alike.

I enjoy themed parties and all the creative ideas that come with them. Browsing party inspiration can be both fun and a little silly — so many kids’ parties look more elaborate than grown-up events. If you like themed celebrations, crafting a few decorations and making themed treats yourself can both reduce cost and add a personal touch. These octopus cupcakes are a great example: they look impressive but are straightforward to make at home.

Crafting Octopus Cupcakes

Being a little crafty helps when planning a themed party. If you or a friend enjoys crafting, you can pair homemade decorations with themed treats to create a cohesive look. These octopus cupcakes pair bright buttercream frosting with simple marshmallow octopus toppers. The process involves baking basic cupcakes, whipping up a smooth buttercream, piping a soft swirl for the body, and topping each cupcake with a chocolate-dipped marshmallow decorated as the octopus head.

Octopus Cupcakes

These cupcakes are fun to make and easy to adapt. You can use store-bought cake mix and premade frosting if you want to save time, or make everything from scratch for a fresher flavor. Colors can be adjusted to match your party palette — blue, teal, purple, or even green frosting work beautifully for the ocean theme. The marshmallow octopus heads are dipped in colored candy melts and adorned with candy eyes for a playful finish.

If you are planning an under-the-sea celebration, consider making a selection of themed treats. Homemade desserts like these octopus cupcakes offer charm without a big price tag, and they are simple enough to prepare in batches for a small gathering or a larger party.

Octopus Cupcakes Recipe

These bright, playful cupcakes serve about 12. Prep time: 20 minutes. Cook time: 15 minutes. Additional decorating time: 10 minutes. Total time: about 45 minutes.

Ingredients

Cupcakes

1 1/2 cups (180g) flour

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

3/4 cup (149g) sugar

2 large eggs

1/2 cup (113g) butter, melted

1 1/2 tsp vanilla

1/2 cup (114g) sour cream

Buttercream

3/4 cup (170g) butter, room temperature

1/2 cup (118ml) vegetable shortening

3–4 cups (339–454g) powdered sugar

1/2 tsp vanilla

Dash of milk, if frosting becomes too thick

Octopus Decorations

Blue or teal food coloring

Orange food coloring

Large marshmallows

Orange candy melts plus a little vegetable shortening

Candy eyes

Equipment

Mixing bowls

Electric mixer

Muffin pan and cupcake liners

Piping bags and tips (large tip for body, small round for legs)

Small pot or microwave-safe bowl for melting candy melts

Instructions

Cupcakes

Preheat oven to 350°F (175°C).

In a bowl, whisk together flour, baking powder, baking soda, salt, and sugar. Set aside.

In a separate bowl, combine eggs, melted butter, vanilla, and sour cream until smooth.

Gradually add half the dry mixture to the wet ingredients, stir to combine, then add the remaining dry mixture and mix until just incorporated.

Fill lined muffin cups a bit more than half full. Bake 14–16 minutes, or until a toothpick comes out clean. Allow to cool completely before decorating.

Buttercream

Beat room-temperature butter and shortening until light and fluffy, about 1–2 minutes.

Add powdered sugar, one cup at a time, beating slowly until incorporated. Add enough to reach your desired frosting consistency.

Beat in vanilla. If the frosting is too thick, add a splash of milk; if too thin, add a little more powdered sugar.

Divide the frosting: reserve about two-thirds for the ocean-colored bodies and one-third for the orange legs.

Tint the larger portion blue or teal, and tint the smaller portion orange. Mix until evenly colored.

Place the blue frosting in a large piping bag fitted with a large star or round tip. Pipe a stacked spiral from the outside toward the center to create a smooth, rounded body.

Place the orange frosting in a separate piping bag fitted with a small round tip. Pipe four legs on each side of the cupcake, then add the octopus body atop the legs.

Marshmallow Octopus Heads

Melt orange candy melts with a small amount of vegetable shortening over low heat or in short intervals in a microwave, stirring until smooth.

Using a fork, dip one marshmallow at a time into the melted candy, spooning chocolate to fully coat. Tap off excess and place on wax paper or a silicone mat to set.

Before the coating sets completely, attach two candy eyes using a tiny dab of melted candy as glue. Hold briefly until secure. Let the dipped marshmallows set fully.

Place a marshmallow head on top of each piped cupcake to finish the octopus look.

Notes

You can simplify this recipe by using a boxed cake mix and store-bought frosting, then coloring and piping the frosting as directed. For sturdier marshmallow heads, chill briefly after dipping. Piping tips and decorating supplies are optional but help create cleaner shapes. All times and yields are approximate and depend on equipment and portion sizes.

Nutrition (per cupcake, approximate)

Calories and nutrition vary based on ingredients and serving size. If tracking nutrition, calculate using the exact brands and quantities you use.

Enjoy these playful octopus cupcakes at your next ocean-themed party — they add color and a bit of whimsy with very little fuss.

When you travel frequently, you learn how important it is to return to a comfortable, well-kept room. If you have a spare bedroom, redecorating it and renting it to holidaymakers is a practical way to earn extra income and meet interesting people from around the world. It can be especially rewarding if you travel less often yourself, since guests bring new stories and perspectives into your home.

Transforming a spare room into an inviting short-stay space doesn’t have to be expensive or time-consuming. With a clear plan and attention to a few key details, you can create a welcoming environment that attracts bookings and earns positive reviews. Below is a concise, practical guide to getting the job done quickly and effectively.

Empty the room first

Start by completely emptying the room if you can. Clearing everything out gives you a fresh perspective and makes it easier to spot repairs and upgrades that matter most to guests. Inspect lighting fixtures, skirting boards, door handles, and switches — small details can give off a strong impression. Replace or repair anything that looks worn or outdated.

An empty room also makes the renovation process faster and safer. You’ll be able to move freely while painting, sanding, or fitting new flooring, and you won’t have to work around furniture and boxes. Organize a temporary storage area for removed items so you can access them later without cluttering the space.

Paint the walls and ceiling

A fresh coat of paint is one of the most cost-effective improvements you can make. Lighter, neutral tones widen a room visually and appeal to a broad range of guests. Matte or eggshell finishes hide minor imperfections, while a clean white ceiling brightens the whole space.

Plan your painting in stages: patch and sand any holes, apply primer where needed, then paint with quality brushes and rollers. Allow adequate drying time between coats to get a professional finish. If you enjoy a personal touch, consider displaying a few framed travel photos or tasteful prints to give the room character without overwhelming it.

Refresh the flooring

Replace worn carpets with laminate, engineered wood, or vinyl plank flooring for a modern, easy-to-clean surface. These options are durable and often more attractive to travelers than old fitted carpets, which some guests perceive as difficult to keep hygienic.

If replacing the entire floor isn’t viable, deep-clean carpets professionally or add an area rug that complements the room’s color scheme. Make sure any rugs have non-slip underlay to keep guests safe and comfortable.

Choose a comfortable bed

A comfortable bed is the single most important element in a successful short-stay room. Invest in a good-quality mattress and a sturdy bed frame. Consider medium-firm mattresses, which tend to satisfy a wide range of sleepers, and provide a mattress protector for hygiene.

Dress the bed with crisp, clean linen, supportive pillows, and a lightweight duvet with an extra throw for cooler nights. Small touches like a bedside lamp, a charging outlet nearby, and a luggage rack make the space more convenient and guest-friendly. Remember: positive sleep-related reviews will greatly increase your appeal and your potential earnings.

Take good photos

High-quality photos are essential for attracting bookings. Use natural light when possible, shoot from corner angles to show the room’s dimensions, and include images of key amenities such as storage space, the bed, and nearby bathroom facilities. Clean, staged photos set realistic expectations and encourage guests to book.

Write clear, honest descriptions to accompany your images: mention the bed size, available amenities, house rules, and any shared spaces. Good communication, combined with accurate photos, helps build trust and leads to better reviews.

With a modest budget and focused effort on these priorities — clearing the room, fresh paint, clean flooring, a comfortable bed, and professional photos — you can convert a spare bedroom into a desirable short-stay rental. The improvements you make now will pay off through higher occupancy, better guest feedback, and an easier hosting experience overall.

Cashew Carrot Bites with Honey Cream — an easy, inventive dessert that’s moist, flavorful and delightfully light. A perfect alternative to a heavy carrot cake.

This recipe was a real lifesaver. One Sunday morning my husband realized he needed to bring a cake to work to celebrate his birthday, and all the shops were closed. I scanned our kitchen and found plenty of carrots. Instead of the traditional carrot cake, I remembered a lighter recipe I’d made years earlier in Moscow: small carrot bites sandwiched with a honey-sweetened mascarpone cream. I couldn’t find all the original ingredients, so I improvised using cashew nuts instead of walnuts and reduced the sugar and butter to keep the treats light while still moist and flavorful. The result was a big hit — coworkers asked for the recipe and I made a second batch right away.

How these bites come together

The base is a simple, spiced carrot cookie studded with chopped cashews. The carrots add moisture and natural sweetness; the nuts provide texture and a delicate nutty flavor. The filling is an easy honey-mascarpone cream that balances the earthy spices and bright carrot flavor. These bites are built like mini sandwich cookies: a generous dollop of cream spread between two cookie halves. Refrigerating them briefly firms the cream and lets the flavors meld.

Preparation tips

Peel and finely grate the carrots so they blend into the dough and release moisture without making the cookies soggy. Roughly chop the cashews so you retain nutty bits for texture. When portioning the dough onto the baking tray, leave space between each mound — the cookies spread slightly while baking. Depending on your oven and tray size, you may need two batches.

Cashew Carrot Bites with Honey Cream

A light, moist dessert made with grated carrots and chopped cashews, sandwiched with a simple honey-mascarpone cream. Quick to make and wonderfully satisfying.

Ingredients

For the bites:

200 grams (about 7 oz) carrots — roughly 4 medium carrots, peeled and finely grated

150 grams (about 5.3 oz) cashew nuts, roughly chopped (walnuts work well too)

130 grams (about 1/2 cup) wheat flour

1 tablespoon corn starch

1 teaspoon ground cinnamon

1/2 teaspoon baking powder

1/2 teaspoon salt

1 egg, room temperature

70 grams (about 1/3 cup) sugar — reduced for a lighter result

2–3 drops vanilla extract

70 grams (about 2.5 oz) butter, softened to room temperature

For the cream:

180 grams (about 6.3 oz) mascarpone cheese

2 tablespoons honey

Instructions

Peel and grate the carrots finely. Roughly chop the cashews and set aside.

In a bowl, whisk together flour, corn starch, ground cinnamon, baking powder and salt. Set this dry mix aside.

In a large bowl, beat the egg with the sugar until well combined. Add the softened butter and vanilla extract, and beat until smooth and creamy.

Switch to a paddle or dough attachment if using a mixer. Add the grated carrots and chopped cashews, mixing until evenly distributed. Gradually incorporate the flour mixture until a cohesive dough forms.

Preheat the oven to 200 °C (about 390 °F). Line a baking tray with parchment paper. Drop heaped teaspoons of dough onto the tray, allowing space between each mound. You may need to bake in two batches if they don’t all fit at once.

Bake for approximately 15 minutes, until the cookies are slightly golden. Remove from the oven and allow to cool to room temperature on a wire rack.

Make the cream by stirring together the mascarpone and honey until smooth. Chill briefly in the refrigerator to firm slightly.

Once the cookies have cooled, spread a generous layer of honey-mascarpone on the flat side of one cookie and top with another flat side to form a sandwich. Repeat with remaining cookies.

Refrigerate the assembled bites for 30 minutes to 1 hour before serving so the cream sets and the flavors meld.

Serve chilled or at cool room temperature and enjoy.

These bites are great for sharing, portable for gatherings, and simple to adapt. If you prefer a different nut flavor, swap the cashews for walnuts or pecans. You can also adjust the sweetness of the cream by adding a touch more or less honey to taste. The reduced sugar and butter in the cookie keep the texture light while preserving the moist, tender crumb that makes these so addictive.

If you try this recipe, I’d love to see your photos and hear how you adapted it. Use the hashtag #HappyKitchen.Rocks on social media so I can find your creations.

Cheers! Elena

This Tajín Grilled Chicken is a simple, flavorful dish that pairs bright lime, chile, and sea salt with juicy, grilled chicken. It’s versatile—serve it with rice, tucked into tacos, added to salads, or prepared ahead for weekday meal prep.

Why You’ll Love Tajín Grilled Chicken

This recipe was inspired by the Mexican market near me where ripe fruit is often finished with a generous dusting of Tajín. The tangy, slightly spicy seasoning wakes up fresh fruit, and it does the same for grilled chicken. Tajín’s combination of chile, lime, and salt gives the meat a bright, punchy flavor while helping it stay succulent and juicy when cooked on high heat.

If you don’t have an outdoor grill, you can easily use a grill pan. Below are directions for a gas grill, a charcoal grill, and a grill pan so you can make this recipe regardless of your equipment. You can also choose whether to marinate the chicken—marinating adds extra depth from lime, garlic, and cilantro, but the dish is still excellent without it if you’re short on time.

Serve with your favorite sides for an easy, satisfying dinner that works for weeknight meals or casual gatherings.

What You’ll Need for Grilled Tajín Chicken

Chicken

Chicken breasts — Use thin-sliced breasts, or halve a larger breast lengthwise and/or pound between plastic until about 1/2 inch thick. This ensures quick, even cooking.

Tajín Clásico — A blend of sea salt, chile, and lime. It adds bright, tangy flavor; about 1/2 tablespoon per breast is a good rule of thumb.

Optional Cilantro Lime Marinade

Limes — You’ll use both juice and zest.

Cilantro — Fresh cilantro adds brightness; omit if you can’t find it rather than substituting dried.

Garlic — Use fresh garlic, minced or grated.

Olive oil — Or a neutral oil like avocado or grapeseed.

Salt — Measurements are for kosher salt; if using table or fine sea salt, reduce the amount by about half and adjust after cooking.

Pepper (optional) — Freshly ground black pepper is nice if desired.

Step Eight — Cook according to your equipment:

Gas grill: Preheat to high. Grill covered for 2–3 minutes per side, until the internal temperature reaches 165°F (74°C).

Charcoal grill: Heat to medium and place the chicken over the hot side; cook 3–4 minutes per side.

Grill pan: Heat the pan over high heat and cook 2–4 minutes per side until the internal temperature reaches 165°F (74°C).

Step Ten — Slice and serve. Finish with an extra squeeze of lime or a light dusting of Tajín if you like.

Recommended Equipment

Kitchen knife, cutting board, microplane or grater, measuring cups and spoons, bowls for mixing, a gas or charcoal grill or a heavy grill pan, tongs, and an instant-read thermometer for best results.

Frequently Asked Questions (FAQs)

What is Tajín seasoning?

Tajín is a Mexican seasoning made from sea salt, dehydrated lime, and ground chiles. It’s tart, mildly spicy, and commonly used on fruit, drinks, vegetables, and grilled meats for a fresh, zesty finish.

How can you tell when grilled chicken is done?

Cooked chicken will be white throughout with no pink center and juices running clear. The safest method is an instant-read thermometer—remove the chicken once it reaches 165°F (74°C) internally.

How do you grill chicken without drying it out?

Watch the internal temperature closely and remove the chicken as soon as it reaches 165°F. Marinating with a bit of salt and oil also helps the meat retain moisture.

Variations and Substitutions

Chicken thighs: Switch to boneless, skinless thighs for a juicier result; they may need an extra 1–2 minutes per side—use a thermometer to confirm doneness.

Sweeter marinade: Add orange juice to the marinade for a fruitier, sweeter profile.

Skillet: If you don’t have a grill or grill pan, a hot skillet works well—cook until the internal temperature reaches 165°F.

Storing Leftover Chicken

Fridge: Store leftover chicken in an airtight container for 3–4 days.

Freezer: Freezing is not recommended if you’ve prepared a fresh crema or sauce, as textures can change on thawing.

Reheating: Reheat gently in the microwave at 30-second intervals or warm in a skillet until heated through.

Expert Tips

To preheat a gas grill, keep the lid closed; for a charcoal grill, removing the lid helps raise heat quickly.

For crisp grill marks, avoid moving the chicken while it cooks—place it at a diagonal across the grates, then flip once.

Cook time depends on thickness: thinner breasts cook faster, thicker pieces take longer—always check temperature rather than relying solely on time.

How to Serve Grilled Tajín Chicken

This chicken pairs well with many sides. Try air-fryer smashed potatoes, sautéed sweet potatoes, or a bright chimichurri rice. Slice it for tacos with cabbage and a squeeze of lime, or add it to salads for a protein boost. It also complements Mexican sides like esquites (Mexican street corn) or pan-roasted zucchini and squash. For an easy meal-prep approach, marinate and grill several breasts at once to enjoy throughout the week.

Equipment

Cutting board

Kitchen knife

Measuring cups and spoons

Bowls

Microplane grater

Gas or charcoal grill, or grill pan

Tongs

Instant-read thermometer

Ingredients

Tajín Chicken

1 pound boneless skinless chicken breast, thin-sliced or pounded to ½-inch thickness

2 tablespoons Tajín seasoning (about ½ tablespoon per breast)

Optional Cilantro Lime Marinade

2 limes, juiced (about 4 tablespoons)

1 lime, zested (about 4 teaspoons)

2 cloves garlic, minced or grated

½ cup cilantro, finely chopped

¼ cup olive oil or neutral oil such as avocado or grapeseed

2 teaspoons kosher salt (see note about salt types)

Instructions

Marinade

Zest the lime into a bowl and combine with cilantro, garlic, olive oil, lime juice, and salt. Mix well.

Spoon the marinade over the chicken in a plastic bag or container, coat evenly, and refrigerate for 30 minutes to 24 hours.

Grilled Chicken

When ready, remove the chicken from the marinade and pat dry, discarding the leftover marinade.

Sprinkle Tajín generously on both sides of the chicken.

For gas grill: preheat to high and cook covered 2–3 minutes per side until internal temperature reaches 165°F (74°C). For charcoal grill: heat to medium and cook 3–4 minutes per side. For grill pan: heat over high and cook 2–4 minutes per side to 165°F.

Let the chicken rest for 10 minutes.

Slice and serve with your chosen sides.

Notes

General

If using table salt or fine sea salt, reduce the salt amount by about half and adjust after cooking, since kosher salt measures differently.

Estimated calories are based on a 4-ounce serving of marinated chicken breast.

The marinade works well when used up to overnight.

This chicken is excellent for meal prep—grill several breasts and use during the week.

Storage and Reheating

Fridge: Store in an airtight container for 3–4 days.

Freezer: Not recommended if a crema or fresh sauce is included.

Reheating: Reheat in the microwave at 30-second intervals or warm gently in a skillet.

This super easy recipe for no‑bake cookies is made on the stovetop in about 15 minutes. No chilling is required—the cookies firm up as they cool. They are chocolatey and peanut‑buttery, with texture from quick‑cooking oats and butter. No eggs or flour are used, so it’s simple to make these cookies gluten‑free by using certified gluten‑free oats. This recipe yields about 36 cookies.

Why this recipe works

The classic pairing of chocolate and peanut butter delivers a familiar, satisfying flavor. The chocolate taste comes from unsweetened cocoa powder, so choose a quality pantry cocoa (not Dutch‑processed) for the best texture and flavor balance.

It uses simple pantry ingredients and requires no special equipment like candy thermometers or processors—just a medium saucepan and a spatula.

No chilling required: the cookie mixture sets at room temperature in about 30 minutes, so they’re quick to prepare and serve.

Ingredients needed to make the easiest no‑bake cookies

Brown sugar: dark brown sugar adds a caramel note, but light brown sugar works too.

Granulated sugar: regular white sugar.

Cocoa powder: unsweetened, not Dutch‑processed for best results.

Salt

Milk: whole milk gives the creamiest results; 2% will also work. Non‑dairy milks may be substituted, though they were not tested here.

Butter: unsalted, cut into cubes so it melts quickly and evenly.

Quick oats: use quick or instant oats—not old fashioned oats—so the cookies set properly as they cool.

Peanut butter: creamy, conventional peanut butter gives the most reliable texture. Avoid natural peanut butter (oil separation) unless you adjust expectations. For allergies, substitute a smooth nut or seed butter.

Vanilla extract: 1 teaspoon for flavor.

Instructions to make no‑bake peanut butter cookies

Step 1

Line two baking sheets with parchment paper or wax paper and set aside.

Step 2

In a medium saucepan, whisk together the brown sugar, granulated sugar, cocoa powder, and salt until evenly combined.

Step 3

Add the milk and butter to the dry ingredients. Place the saucepan over low heat and stir constantly until the butter is fully melted and the mixture is smooth.

Step 4

When the butter has melted, increase the heat to medium and bring the mixture to a full rolling boil, stirring constantly. Keep it at a full boil for exactly one minute while continuing to stir to prevent scorching. After one minute, remove the pan from the heat and stir for a few seconds more.

Step 5

Working quickly, stir in the peanut butter and vanilla until the peanut butter has melted and the mixture is smooth.

Step 6

Fold in the quick oats with a rubber spatula until they are evenly coated and distributed through the hot mixture.

Step 7

Using a 1‑tablespoon cookie scoop (or a spoon), drop rounded portions onto the prepared baking sheets. The cookies may spread slightly—this is normal. Let them cool at room temperature until firm, about 30 minutes. For a firmer texture, chill the cookies for 30 minutes before serving.
