Soak the oats!

Oats contain phytic acid, which can reduce absorption of minerals like iron, zinc, and calcium. Soaking oats for 8–24 hours breaks down that phytic acid, improving nutrient availability.

It’s fine to use the soaking liquid in the batter — after soaking, the phytic acid is dismantled and won’t re-form. You’ll also get a bonus: a mild oat milk that adds flavor and texture to the muffins.

It takes a little planning to soak oats the night before, but it quickly becomes a routine.

No time to soak oats?

If you need muffins immediately, skip the soaking and use your preferred milk instead of the soak water. Blend and bake as directed — they’ll still be tasty, though soaking is better for nutrient absorption.

Ingredients

  • 2 cups steel cut or gluten-free old fashioned oats
  • 2 cups water
  • 1 tsp apple cider vinegar
  • 2 ripe bananas or 1 cup pureed pumpkin

  • 1 ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp vanilla (optional)

  • Optional: 1/4–1/2 cup sweetener of choice (maple syrup, coconut sugar, cane sugar, honey, or monk fruit)

Instructions

  1. Night before: Add oats, water, and apple cider vinegar to a blender and let soak for 8–24 hours.
  2. Morning of: Preheat the oven to 375°F and prepare a muffin tin (silicone liners work well).
  3. Add all ingredients except chocolate chips to the blender and blend until smooth.
  4. Fold in ½ cup chocolate chips or sprinkle them on top of each muffin.
