- Unsalted butter
- Onion
- Garlic
- Broth (chicken or vegetable)
- Dry orzo pasta
- Fresh lemons (zest and juice)
- Black pepper
- Parmesan cheese, freshly grated
- Frozen peas
- Fresh herbs (basil, parsley, or choice)

Method

Sauté aromatics. Use the Instant Pot Saute function to melt butter, then cook diced onion 3–5 minutes until soft and translucent. Add minced garlic, stir, then turn off Saute.

Deglaze and season. Pour in the broth and scrape any browned bits from the pot. Add lemon zest and black pepper.

Add pasta and cook. Stir in the orzo, then cook at high pressure for 4 minutes and perform a quick release.
Stir in the remaining butter and the Parmesan until melted and combined.

Add lemon juice and peas. Stir in fresh lemon juice and frozen peas, cover, and let the residual heat warm the peas through for a few minutes.

Finish with herbs and serve. Fold in chopped fresh herbs and top with extra Parmesan if desired. Serve warm.

Ingredients
- 4 TBSP unsalted butter, divided
- 1 small onion, diced
- 2 tsp minced garlic
- 3 1/4 cup broth (chicken or vegetable)
- 2 cups dry orzo pasta
- Zest of 2 lemons (approx. 2 tsp)
- 1/2 tsp black pepper
- 1 1/2 cups freshly grated Parmesan cheese
- Juice of two lemons (approx. 4 TBSP)
- 1/2 cup frozen peas
- 1/4 cup chopped fresh herbs (basil and parsley recommended)
Instructions
- Add 2 tablespoons butter to the Instant Pot. Use Saute to melt butter, then add diced onion. Cook 3–5 minutes until translucent.
- Add minced garlic, stir, and cancel Saute.
- Add broth and scrape up any browned bits from the bottom.
- Stir in orzo, lemon zest, and black pepper.
- Close the lid and set vent to sealed. Cook on Manual/Pressure Cook at high pressure for 4 minutes.
- Perform a quick release when the cook time finishes. Remove the lid carefully.
- Stir in the remaining 2 tablespoons butter and the Parmesan until melted.
- Add lemon juice and frozen peas; cover and let heat warm the peas a few minutes.
- Fold in chopped fresh herbs and serve with extra Parmesan if desired.
