For this version I kept things simple. No salted caramel, no hot fudge, no cheesecake filling — just a classic chocolate chip cookie pie studded with M&Ms. It’s versatile: bake it until it’s risen and golden for a fluffy result like in the photos, or shorten the bake by 5–10 minutes for a gooier, denser center if you prefer indulgent textures.

Want it even gooier? Spoon half a can of sweetened condensed milk into the center before baking. The condensed milk helps the pie bake through while leaving the middle irresistibly soft — a great trick for lovers of ooey-gooey desserts.

Ingredients

  • ¾ Cup and 2 Tbsp. Butter, Partially Melted (200g)
  • ¾ Cup Brown Sugar (150g)
  • ½ Cup Sugar (100g)
  • 1 Tbsp. Golden Syrup*
  • 2 teaspoon Vanilla Extract
  • 2 Large Eggs
  • 2 and ½ Cups All Purpose Flour (310g)
  • 1 teaspoon Baking Powder
  • teaspoon Salt
  • ¾ Cup Chocolate Chips (135g)
  • 1 Cup M&Ms (220g)
Metric – US Conventional

Instructions

  • Preheat the oven to 180°C (350°F) and grease a 9″ (20cm) round pie dish.
  • Beat the very soft or partially melted butter with the brown sugar and granulated sugar until combined.
  • Beat in the eggs one at a time until smooth.
  • Add the vanilla extract and golden syrup, mixing until incorporated.
  • Fold in the flour, baking powder and salt until just combined.
  • Stir through the chocolate chips and M&Ms.
  • Press the cookie dough into an even layer as the base of the prepared dish.
  • Bake for 20–25 minutes. The center will still wobble while the edges turn golden.
  • Allow the pie to cool completely before slicing, or serve warm with a spoon.

*If you don’t have golden syrup, omit it or substitute with maple syrup.

For a gooier center, add half a can of sweetened condensed milk to the middle before baking.
