Red White & Blue Cowboy Cookies
Celebrate the 4th of July with festive cowboy cookies studded with red, white, and blue M&M’s and plenty of chocolate and oats.

Ingredients
- 1 1/3 c. all-purpose flour
- 1 c. old-fashioned rolled oats
- 1/2 c. brown sugar packed
- 1/2 c. granulated sugar
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1 lg. egg slightly beaten
- 1/2 c. butter softened
- 1 tsp. vanilla extract
- 3/4 c. M&M candies red, white & blue
- 3/4 c. semi-sweet chocolate chips
- 1/2 c. pecans optional
Instructions

Preheat the oven to 375°F (190°C). Line two baking sheets with parchment paper and set them aside.

In a large bowl, combine the flour, oats, brown sugar, granulated sugar, baking powder, baking soda, and salt. Stir to blend evenly. Add the slightly beaten egg, softened butter, and vanilla extract. Mix with a large spoon until the dough comes together; you may need to use your hands to fully incorporate the ingredients.

Fold in the M&M’s, chocolate chips, and pecans, if using. Shape the dough into 1½-inch balls and place them on the prepared baking sheets, spacing them a couple of inches apart. Press each ball down slightly with your hand.

Bake for 10–12 minutes, until the edges are set and lightly golden. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
