Raspberry Hot Chocolate Granola Bars

Ingredients
- ¾ cup unsalted butter, softened
- ¾ cup packed brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 ½ cups all-purpose flour
- 2 ½ cups quick oats
- ½ teaspoon salt
- ¾ cup dry raspberry hot chocolate mix
- ¾ cup raspberry M&M’s
- 1 cup mini marshmallow bits
- ¼ cup white chocolate melts, melted (optional)
Instructions
- Preheat oven to 350°F (175°C). Spray a 9×13-inch pan with nonstick spray.
- In a mixing bowl, beat the butter and brown sugar until creamy. Add the vanilla and eggs and beat until combined.
- Whisk together the flour, oats, salt, and dry raspberry hot chocolate mix. Gradually add this dry mixture to the butter mixture and mix until incorporated.
- Gently stir in ½ cup of the raspberry M&M’s and the mini marshmallow bits.
- Spread the mixture evenly in the prepared pan. Press the remaining ¼ cup of M&M’s into the top. Bake for 20–22 minutes. Remove and cool on a wire rack; the bars will set as they cool.
