Welcome to episode one of the Battle of the Dishes series!

For this inaugural season I picked SPAM as the recurring ingredient, and many readers asked for French toast—so here it is.
This version uses a basic French toast batter adapted from a classic recipe and simply incorporates pan-fried SPAM slices tucked into thick-cut bread. The result is savory, slightly sweet, and very satisfying.
Ingredients
- 2/3 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract (optional)
- 1/4 teaspoon ground cinnamon (optional)
- salt to taste
- 6 thick slices of bread
- 1 tablespoon unsalted butter, or more as needed
- a little oil for frying
- 6 slices of SPAM (or as many as you need for your bread slices)
Directions
1. In a small bowl, whisk together the eggs, milk, a pinch of salt, and the optional vanilla and cinnamon. This is your French toast batter.
2. Cut the bread into extra-thick slices, about 1 inch. Using a knife, hollow out a pocket in the center of each slice large enough to hold a SPAM slice.

3. Heat a little oil in a skillet and pan-fry the SPAM until it’s lightly golden on both sides.

4. Remove the SPAM from the pan and place one slice into the pocket of each bread slice.
5. Dip each stuffed bread slice into the batter, making sure both sides are coated but not saturated. Melt the butter in a clean pan over medium heat and fry the battered bread until golden brown and cooked through, flipping once. Cook to your preferred level of doneness.

- ¼ teaspoon ground cinnamon optional
- salt to taste
- 6 thick slices bread
- 1 tablespoon unsalted butter or more as needed
- 1 tablespoon oil
- 6 slices SPAM or however many bread slices you have
Method

Whisk together eggs, milk, salt, and the optional vanilla and cinnamon to make the batter.

Slice the bread about 1 inch thick and carve a pocket in the center large enough for a SPAM slice.

Heat oil in a pan and pan-fry the SPAM until lightly golden.

Place each cooked SPAM slice into the pocket of a bread slice.

Dip the stuffed bread into the batter, then fry in a pan with melted butter until golden and cooked through. Serve warm.
