
I’ve been making breakfast casseroles for years without a strict formula — browning some sausage, tossing in whatever vegetables I have, mixing in potatoes until it looks right, then covering everything with eggs and cheese. What makes this version special, though, are the tater tots. Their crisp, pillowy bites tucked among the peppers, eggs, and cheese bring a comforting, playful texture that elevates the whole dish.

Along with two bell peppers, I add a jalapeño and a few dashes of hot sauce for background heat. - 12 eggs
- 1/2 cup milk
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 1 tsp. hot sauce
- 2 bell peppers, chopped (one yellow, one red recommended)
- 1 jalapeño pepper, seeds removed and chopped
- 16 oz. frozen tater tots
- 2 cups shredded cheddar cheese
- Preheat oven to 350°F (175°C). Spray an 8 x 12-inch baking dish (or a similar-sized oval dish) with nonstick cooking spray.
- In a large bowl, whisk together the eggs, milk, salt, pepper, and hot sauce until well combined.
- Arrange the tater tots in an even layer on the bottom of the prepared dish. Scatter the chopped bell peppers and jalapeño over the tater tots, then sprinkle half of the cheddar cheese on top.
- Pour the egg mixture evenly over the tater tots and peppers. Finish by sprinkling the remaining cheese across the surface.
- Bake for 40–45 minutes, or until the eggs are set and the cheese is melted and lightly golden. Let the casserole rest for about 5 minutes before slicing and serving.
