Coffee Talk #5: a chance to catch up on the little things in life—both sweet and salty! 😉 August 2018

Hiya! It’s Demeter again. 🙂 If you’re new to Beaming Baker, I’m the baker behind it all—the cookies, the no-bake treats (yes, really), and the stories. Once a month I share a little update on life and a few things I’m excited about. Ready to catch up? Let’s go!
Monica’s Visit… My sister Monica just came to visit and it was such a joy. Our time together felt equal parts heartwarming, nostalgic, and delightfully silly. My sisters and I are very close—we even have a group text chain that can get pretty loud. On some days we send anywhere from 55 to 175+ messages; yes, really. Family life is full of those small, noisy moments that make everything sweeter.

Side note: after my mom and Jenny teased Monica and me for posing at the sweltering T stop, Erik surprised us with this beautiful photo above—aren’t those turnstiles a stunning backdrop? And seriously, how gorgeous is my sister? ❤️
We made the most of her visit: went out on the town, ate far too much, and had our semi-annual heart-to-heart about how life is going. It made me wish she lived closer, but I’m grateful for the time we had together.
Do you live near your siblings? How do you keep in touch when you’re far apart?
Fitness Stuff… Lately I’ve been rediscovering favorite fitness YouTubers and finding new ones too. I’m thinking about sharing a few motivating video picks in the next Coffee Talk—would you like that? A few I’ve been loving are Fitness Blender, Brix Fitness, and Natacha Océane.
Dylan & Kai’s Birthday Party… Party of the year! My nephews Dylan and Kai celebrated with a big Legoland bash. Their birthdays are close together, so Jenny combined them into a two-for-one celebration and it was a blast. Erik’s inner child definitely came out—Legoland was everything Dylan had hyped up: massive Lego sculptures, water features, and enormous play structures. We were spotting tiny bricks for days afterward.

Preparing for Fall… Fall is almost here and I’m excited. I’ve been thinking about pumpkin recipes and holiday baking for months. I’m torn between holding back and pacing the pumpkin content, or going full-on pumpkin and sharing several recipes a month through November. What would you prefer?
A Sneak Peek of Fall

European Vacation Ideas… I asked for travel suggestions on Instagram and got wonderful recommendations: Scotland, Paris, Poland, spots in Norway (Oslo, Bergen, Trondheim), Brighton, Prague, Budapest, and more. We’re hoping to plan a European trip eventually, though time and budget are tight. If you have a favorite European destination that’s great for a short trip, I’d love to hear it.
Current Popular Recipes… Here are a few recipes readers are loving right now:
- 3 Ingredient No Bake Peanut Butter Oatmeal Cookies
- 5 Ingredient Homemade KIND Nut Bars
- Vegan Chocolate Cake — this one makes me so happy; it’s a true favorite of mine.
- Gluten Free Peanut Butter Chocolate Chip Cookies — a new recipe I’m excited about.
- Mini Vegan Brownie Bites — soft, fudgy, and unexpectedly popular. I’m thinking about new flavor twists for these if there’s interest.

Popular Recipes from the Archives… A few older favorites still getting lots of love:
- 4 Ingredient No Bake Chocolate Peanut Bars (Dec 2016)
- Gluten Free Vegan Oatmeal Chocolate Chip Cookies (Mar 2017)

That’s all for this month! How was your month? Any travel plans or new recipes you’re excited about? I love hearing from you and can’t wait to catch up again next time.
Sending you all my love, xo Demeter ❤️
