Since Shane started school and needs to be at school by 9 a.m., our household has officially turned into morning people. We’re now up between 7 and 8 a.m. most days getting everyone dressed, fed, and out the door. With so much to do — and with kids moving at their own leisurely pace in the morning — the last thing I want to do is stand over a stove. But I also don’t want to rely on a frozen waffle every day. I need a make-ahead breakfast that won’t get soggy, will actually fill me up, and reheats quickly. These mini freezer bagel sandwiches fit the bill perfectly.

You can prepare an entire batch of these ahead of time and freeze them. They hold up well in the freezer and reheat quickly, so you can enjoy a warm, protein-packed breakfast on hectic mornings without any fuss. They’re portable, satisfying, and customizable depending on whether you prefer sausage or ham.

Easy Mini Freezer Bagel Sandwiches
Ingredients:
1 package mini bagels
For sausage: 8-count package fully cooked breakfast sausage patties
For ham: sliced ham of your choice
8 slices American cheese
Directions:
1. Split all the mini bagels and lay the bottoms in a row.
2. Place one cooked breakfast sausage patty (or a folded slice of ham) on each bagel bottom.
3. Add a slice of American cheese on top of the meat for each sandwich.
4. Put the bagel tops on.
5. Individually wrap each sandwich in plastic wrap, then place the wrapped sandwiches into a large freezer-safe zipper bag.
6. When you’re ready to eat, remove a sandwich from the freezer and take off the plastic wrap.
7. Wrap the sandwich in a paper towel and microwave for about 1–2 minutes, checking at the 1-minute mark. Microwave power varies, so if the sandwich isn’t fully heated, continue in 30–60 second increments until hot. Enjoy your quick, warm breakfast!
These sandwiches are great for busy mornings, car rides, or quick lunches — make a big batch, store them in the freezer, and reheat as needed for a grab-and-go option that tastes homemade.
